You seem to mis understand what this diet is, yes people did only eat this diet to survive which is why it works, those best adapted to get all of the nutrients out of these foods survived in the long run. Human DNA is 99.8% identical so we can tell at one point our ancestors where forced to the brink of extinction. This means that we are all so similar and specialized for that specific time in our history that chances are this diet works because of natural selection.
